American Idol


I hope that some of these contestants grow on me. I don't like any of the girls so far. Maybe the Carrie Underwood looking girl that's also from OK...Alaina something?? I kinda like Ashiah (is that her name???) too. I like a couple of the guys...the little David guy (that did a John Mayer song in his audition), the other David guy (rocker with the colored streak in his hair), and my favorite, Michael Johns seen here.

Sick Sick Sick

I'm lying here on the sofa with my laptop watching AI and feeling all groggy from some painkillers. This afternoon, I started having HORRIBLE pain (I have endometriosis). I just started a new hormone treatment to curb the symptoms and it hasn't agreed with me. So anyway, I'm hoping I'm better before tomorrow because I can't miss work. I just can't.

Nathan had to work late...it always seems to happen on the worst days. I managed to get to the freezer and put a frozen pizza in the oven. That's about all I did. Not my best mommy evening.

I hate that we all had to miss AWANA tonight. It seems like either Nathan, myself, or both of us have had to miss due to sickness or whatever. Jonathan has some major catching up to do.

I'll try to list some things I haven't already told you all on my blog.


1. I am an only child. I grew up with lots of cousins and some great friends, but I was lonely as a child...I always longed for that brother or sister. I am blessed to have two great step-sisters now, but it's still not the same as growing up with them.

2. I LOVE storms (the heavier the better) and rain and honestly, I love a cloudy day. To me, it just makes being home more cozy...and it gives me an excuse to just be home and do nothing.

3. I'm obsessed with college football. I'm a HUGE Oklahoma Sooner fan and even got my husband on board. He was not a football fan at all growing up. He now loves college football as well as pro. We live for watching games on Saturday, watching the stats on Sunday, and then hearing all the hoopla during the week. We go into mourning when the season is over. My second favorite college football team is the Arkansas Razorbacks...God bless them. I'm hoping and praying they do well (finally) with a new coach and win at least an SEC championship.

4. I love to cook and I love to cook for people! I love being surrounded by people (maybe it goes back to being an only child) in my home and just entertaining and having fun.

5. I can see gross things, body parts/fluids, those forensic creepy shows, surgery shows and I'm fascinated, but if I smell anything with even a remotely bad smell, I will gag...eyes will water, the whole nine yards. See why I could never be a nurse.

6. I drink WAY too much Diet Dr Pepper. I go through a 12 pack of cans in like three days, and that's not including my every other day or so Sonic run or the complimentary drinks we get at work.

7. I love to read. Lately it's been magazines since it's a quick read. I love to get magazines so if you have any to recycle, I'm willing to take them!

Wall Words

Has anyone seen them? I know there are several brands...not sure I'd get these exact ones www.wallwords.com but there are other sites that offer them. Guess I'd just have to check the prices.

A friend of mine in MA had them in her house and I liked it. I'm really considering getting one for my breakfast area...not sure what yet, but I'd like a Bible verse possibly.

I just wonder if they are easy to apply. Any experience with them my friends???

Meaning to do this for years!


We are from the twin city area...doesn't that sound so sophisticated?! ;) Not the twin cities like Minneapolis/St. Paul, but Texarkana AR/TX. So since we were there last weekend, we finally remembered to take the boys down for a photo at the state line. What a great photo op! And even though it's not near as monumental as the "four corners" portion of the US, it's still pretty neat to have one foot in AR and one foot in TX or as seen here, one boy in AR and one in TX!

I forgot to mention in the last post that I got to shop at my two favorite places in the whole wide world!!! Williams Sonoma (my former place of employment) and Pottery Barn. I was so good at Pottery Barn, not buying anything, but I couldn't resist these deep dish pizza pans at WS. We love pizza and these will be great for making our own, individual pizzas since we all like different toppings.

I have a new wish list since I hadn't seen what all they have in a while. I must resist going to the store online. ***sigh***

The Weekend

Hope everyone had a great weekend. We went to Arkansas for a visit with the newlyweds, Nate's sister, Sarah and brother in law, David. The boys stayed with the grandparents by their choice! :) They were totally spoiled...Ne-Ne made their favorite ginger snaps, homemade spaghetti and meatballs, and then going out for pizza, KFC (the boys LOVE KFC and we never take them, poor things.), shopping at Dollar Tree, Home Depot, and Target.


Anyway, the four of us had a great time...hanging out playing Wii, shopping, eating at a great place called the Marketplace Grill (see the flaming queso!), and bowling. I am a horrible bowler, but it was fun nonetheless.


I'll say it again...it's so nice being close to family.

Geez Louise


look at these lips!!!! Not just his lips, but his little chin, cheeks, nose... Seth will not quit licking his lips. I mentioned it to our Ped and he said that it was due to something going on that's in the same family as his atopic dermatitis (eczema). Seth's licking it for relief. Well, I got an Rx for some stronger hydrocortisone and we've been using it religiously. That alternated with regular chapstick. Thing is...Seth will lick even that stuff! I try to sneak in at night, while he's asleep. The kid can be dead to the world and as soon as I put something on...he'll turn over, eyes closed and all and wipe it on his pillow!!


I've started with an entry on his reward chart to see if that will help. I have offered him treats, privileges, even cash if he'd just stop...no such luck. I hate to start taking away things...


Oh and this only started when we moved. His SS teacher gave me her idea on it...that it's a nervous habit at this point. I don't know...he's got to be miserable though!

Well here's what I got done...

1. Purged the kid's artwork and papers
2. Got the Valentine's goodies
3. Got the boy's give away clothes organized and even now delivered to their recipients!
4. Took J's comforter to the cleaners
5. Dusted the entire house (it already needs it again ugh)
6. Organized my scrap room, but didn't give away old supplies yet...hopefully on Thurs at work.
7. Looked for some furniture...actually we bought a new sofa for upstairs!
8. Did our taxes! It was so easy because everything transferred over on Turbo Tax from last year and everything from our banks...how cool!

SO...I still need to make Valentines, alter the Target mail boxes, go through my closet, clean the door, clean the back porch and yard, and look at shrubs. I have to do the Valentines and mail boxes TOMORROW!

I've got a busy weekend. I got so much done today...laundry, cleaning bathrooms/kitchen/floors, grocery shopping. Seth had a friend over today and I'm sure that's why. :)

King Ranch Casserole


And it was YUMMY!! I got it from my newest Southern Living magazine. I substituted 3 large boneless, skinless breasts for the whole chicken and I omitted the celery and carrots since I didn't have those. I also used a very small onion and only 2 cups cheddar cheese (all I had).

King Ranch Casserole

Ingredients

1 (4 1/2- to 5-lb. ) whole chicken
2 celery ribs, cut into 3 pieces each
2 carrots, cut into 3 pieces each
2 1/2 to 3 tsp. salt
2 tablespoons butter
1 medium onion, chopped
1 medium-size green bell pepper, chopped
1 garlic clove, pressed
1 (10 3/4-oz.) can cream of mushroom soup
1 (10 3/4-oz.) can cream of chicken soup
2 (10-oz.) cans diced tomatoes and green chiles, drained
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon Mexican-style chili powder
3 cups grated sharp Cheddar cheese
12 (6-inch) fajita-size corn tortillas, cut into 1/2-inch strips

Preparation

1. If applicable, remove giblets from chicken, and reserve for another use. Rinse chicken.
2. Place chicken, celery, carrots, and salt in a large Dutch oven with water to cover. Bring to a boil over medium-high heat; reduce heat to low. Cover and simmer 50 minutes to 1 hour or until chicken is done. Remove from heat. Remove chicken from broth; cool 30 minutes. Remove and reserve 3/4 cup cooking liquid. Strain any remaining cooking liquid, and reserve for another use.
3. Preheat oven to 350°. Melt butter in a large skillet over medium-high heat. Add onion, and sauté 6 to 7 minutes or until tender. Add bell pepper and garlic, and sauté 3 to 4 minutes. Stir in reserved 3/4 cup cooking liquid, cream of mushroom soup, and next 5 ingredients. Cook, stirring occasionally, 8 minutes.
4. Skin and bone chicken; shred meat into bite-size pieces. Layer half of chicken in a lightly greased 13- x 9-inch baking dish. Top with half of soup mixture and 1 cup Cheddar cheese. Cover with half of corn tortilla strips. Repeat layers once. Top with remaining 1 cup cheese.
5. Bake at 350° for 55 minutes to 1 hour or until bubbly. Let stand 10 minutes before serving.
*1 tsp. chili powder and 1/8 tsp. ground red pepper may be substituted for Mexican-style chili powder.

Variations: (which I want to try next time)
Lightened King Ranch Chicken Casserole: Reduce butter to 1 Tbsp. Substitute reduced-fat cream of mushroom and cream of chicken soup for regular and 2% reduced-fat cheese for regular. Prepare recipe as directed through Step 4. Bake, covered, at 350° for 50 minutes; uncover and bake for 10 to 15 minutes or until bubbly. Let stand 10 minutes before serving.
Note: For testing purposes only, we used Cracker Barrel 2% Milk Natural Sharp Cheddar Cheese.
Quick-and-Easy King Ranch Chicken Casserole: Substitute 1 (2-lb.) skinned, boned, and shredded deli-roasted chicken for whole chicken, 3 cups coarsely crumbled lime-flavored white corn tortilla chips for corn tortillas, and 3/4 cup chicken broth for cooking liquid. Omit celery, carrots, and salt. Prepare recipe as directed, beginning with Step 3.

Yield
Makes 8 to 10 servings

Sorry for the late update...

Jonathan does have asthma. :( They did a couple hours worth of testing Tuesday afternoon...we were so worn out after that appointment, but at least we know... The Ped was SO good about listening to me and honoring my wishes to just test him and not keep wondering or guessing or waiting. I figured she would try to put it off on the allergist, but she didn't. And just to back up, the reason the allergist didn't test before is because he wanted sound results. Jonathan had a bad sinus infection as well as an upper resipratory infection that could've affected his results.

Jonathan's on albuterol and a steroid. We see our allergist in two weeks and I'm going to talk to him about getting a nebulizer.

He's not doing that much better so far, well maybe a little. I'm not sleeping because I'm worried about him...with the asthma and him taking all these medications. I'm praying for some fast relief and for us to be able to deal with this.

My sweet little guy


Jonathan is so sick. I had to call in sick from work today because he's home. I'm taking him to his Ped today. His constant cough has become even more constant. He didn't sleep hardly at all last night (nor did I). His allergist is suspecting asthma, but we haven't gotten a definite diagnosis...I guess it's hard to diagnose asthma??? But we've got to do something. He's got to have some relief. If it isn't asthma, he needs to be treated for whatever. Surely something can help. This is affecting his life all around. School/Home/Sleep/Play. Every time he coughs, he says he's having a hard time catching his breath. Please keep him in your thoughts and prayers.
Seth and I, along with a friend and her son went to see this yesterday. It was pretty cute, definitely worth seeing.

Please pray for this sweet family

I am a paper crafter and I read alot of paper crafter's blogs. On one of the blogs I read from time to time, I noticed a link that led me to http://cfhusband.blogspot.com/. I read through this entire blog in one sitting and became so inspired and awe struck. I am inspired by the obvious display of Nathan's (the author) deep faith. His beautiful wife, Tricia is suffering from Cystic Fibrosis. I won't give away all the details because I want each and everyone of you (does anyone ever read my blog?! LOL!) to also read Nathan's blog. I check this blog several times a day and incorporate it into my daily devotion. Each time I pray, I pray for them. I'm asking you to do the same. I promise you that you will be inspired and like me, won't be able to stay away. Keep you Kleenex in arm's length. :)

Started my new job today

And I LOVE it!!! The staff/teachers are all so welcoming and nice (great thing about being in the south hee-hee!). The kids are absolutely adorable and so smart! Such a fun atmosphere. Seth loves it too!

For now, this is what I'm going to stick with. This and a good budget. :)

You know, I should consider opening up my own daycare since every daycare in a 50 mile radius is full with mile long waiting lists...hence my big reason for not even going there....meaning applying somewhere full-time. I also need to pray for contentment...I think God has shown me that just in today.

Trying a new recipe


This looked good...I'm taking out the rice (having spanish rice on the side) and the corn and I will be adding some spices to the chicken.
Layered Chicken Enchilada Pie (from Kraft Foods)
Ingredients:
(11.5 ounce) package Old El Paso(R) Flour Tortillas for Burritos
2 cups cubed cooked chicken
1/2 cup uncooked instant white rice
8 ounces shredded reduced-fat Monterey Jack cheese
1 (15 ounce) can Progresso(R) Black Beans, drained, rinsed
1 (19 ounce) can Old El Paso(R) Red Enchilada Sauce
1 cup Green Giant(R) Frozen Shoepeg White Corn, thawed
1 cup Old El Paso(R) Thick 'n Chunky Salsa
2 tablespoons thinly sliced green onions
Reduced fat sour cream (optional)
Chopped green onions (optional)
Directions:
Heat oven to 350 degrees F Spray 9-inch round (2-quart) glass baking dish or casserole with nonstick cooking spray. Cut 5 of the tortillas in half. Cut remaining tortillas into 2 1/2-inch-wide strips. In large bowl, combine chicken, rice, 1 cup of the cheese, beans and 1 cup of the enchilada sauce; mix well.
Layer 4 tortilla halves in bottom of sprayed baking dish. Top with 1/4 cup enchilada sauce and half of the chicken mixture. Top with 2 tortilla halves; fill in empty spaces with 3 tortilla strips. Spoon corn over tortillas. Spread salsa over corn. Layer with 2 tortilla halves and 3 strips. Top with remaining half of chicken mixture. Continue layering with remaining 2 tortilla halves and strips, enchilada sauce, cheese and 2 tablespoons green onions.
Bake at 350 degrees F for 35 to 45 minutes or until mixture is thoroughly heated and cheese is melted. Cool 5 minutes. Top with sour cream and green onions.
Yield: 6 servings

For those of you with IPODS

What are some songs on your playlist? I need some ideas on songs to download to mine, since I finally sat down today and figured out how to do it all. My parents got it for me for Christmas along with a nice ITunes gift card. :)

You can imagine I've got every John Mayer song on there known to man (downloaded from my CDs, except for his new song "Say") and then a few more, but I can't think what I want to buy.

What are some good, current songs? I prefer Rock and Contemporary Christian. It's funny...on my list so far, you can find Ozzy Osbourne right after Jeremy Camp! :)

Transitions are hard

I'm thinking about going back to work...full time. I haven't even started this part-time job, but I keep thinking it's time for something more. I have a couple of great leads that I'm going to look into this week.

I don't know though...I keep thinking I should hang on until Seth starts school next fall. Nathan is supportive either way, but leans more to me just doing the part-time job for now or not even doing that (he always has been and I love him for that). He's so sweet...telling me I have a real job...that I'm contributing more than I could know...that I'm raising my kids and making a home. He likes the way it is now and it's what he knows...his mom was a sahm until he was graduated high school.

One major thing...It's going to be hard finding child care...full-time for Seth, after (or perhaps even before) school for Jonathan. I'm just rambling, but I don't think I'm contributing like I should. I mean, we're doing ok, but we could be better off financially...Nathan needs/wants a new vehicle. We should be putting more into savings/college and retirement accounts.

I don't know...I feel so torn. I'm praying that God will give me a sign on where I should be. I know I can't continue the way it is now...I'm admitting this....I go shopping WAY TOO MUCH to contain my boredom. Like, my biggest decision on any given day is whether to go to Wal-Mart or Target. :( And that's sad.

I'm seriously going to start a budget and stick to it...praying that I do. I have to. I'm giving myself an allowance and once it's gone, it's gone. I promise to update here and let everyone know how I do...in two weeks. Every payday. I'm putting this all out here so it will make me more accountable...hopefully.

I couldn't start work today...

because the Director is out sick with a tummy bug and she's the only one that can process my paperwork, etc. SO...I'll start next Tuesday. That's ok. I know they are so short handed though...with them having to get a sub for the 4 year old class until I can start and then I guess this bug is going around there with a vengence.

I didn't leave Seth mainly for that reason and for the fact that I feel odd leaving him there without me paying/being there working. Oh well...I have a few things I need to do anyway.

Also...
Last night, Nathan was driving home from work and he had a "slight" accident. He'd KILL me if he knew I was sharing this here, but I think it's essential to reiterate the importance of not using electrical devices while driving.

Anyway, rewind to last night...about 45 minutes until we are supposed to be at AWANA. He calls me...he'd veered off the road and slammed into a culvert with a large curb...hit it, blew out the tire, and dented the rim. :( I mean it could've been ALOT worse, especially after hearing that a woman about two hours earlier, flipped her car, was ejected from it, and died not two miles away. Three other people were seriously wounded.

When he called, I asked him what happened...he was embarrassed and hesitant to say that he was sending his boss a reply to an email on his blackberry. :( Insane.

Hopefully a huge lesson was learned. Needless to say, we didn't make it to AWANA and now we are going to have to even budget more for the repairs to the car/tire. I'm going to help out with that today.

And it's not just electrical devices...it's senseless to concentrate on anything else (eating, reading, smoking, distractions, etc) while driving.

I'm working!

I got a job teaching at a local church in their preschool department. They had a 4 year old teacher leave at Christmas and they had been trying to fill it. It was all God that I even called that place to check on a spot for Seth. I met with the Children's Minister last week and with the Director today. I'm starting on Thursday! It's not a bad, little supplement to our finances and Seth can go there for free! Now I can make that appointment to get my hair trimmed and highlighted. ;)

Now let's just hope that Seth (and/or I) do ok being in the same classroom.

1. What did you do in 2007 that you’d never done before?
Went to Canada/Niagara Falls
2. Did you keep your new year’s resolutions, and will you make more for next year? No, I never keep them since it's always to exercise more and eat better. This year I made the same...maybe it will be the year! I also made the resolution this year to stop collecting paper crafting supplies and actually start paper crafting.
3. Did anyone close to you give birth?
Yes, my dear friend Kathryn that's in NE had her third baby girl.
4. Did anyone close to you die? A family friend
5. What states/countries did you visit? Wow...lots! Florida, North Carolina, South Carolina, Viriginia, DC/Maryland, Delaware, New Jersey, New York, Maine, Rhode Island, Vermont, New Hampshire, Connecticut, Ohio, Pennsylvania, Illinois, Indiana, Missouri, Arkansas, Texas and Canada. Of course some of these were with the move...wonderful benefit of being military. :)
6. What would you like to have in 2008 that you lacked in 2007? Warm weather. ;) More discipline to read my Bible...putting my spirituality at a higher priority.
7. What dates from 2007 will remain etched upon your memory, and why?
July 15th...I saw my favorite performer in concert in Manchester, NH, John Mayer with my good friend Kathy. BLAST!! September 1st, DH got promoted. Also, November 14th, the day we said goodbye to all our friends in Massachusetts.
8. What was your biggest achievement of the year? I can't think of an achievement really. Isn't that sad?!
9. What was your biggest failure? Not sticking with an exercising routine and eating too much junk.
10. Did you suffer illness or injury?
I suffered from Mono...had symptoms for nearly six months. And even once in a while, I get a reoccurance.
11. What was the best thing you bought? My new house!

13. Whose behavior made you appalled and depressed? Well I found something out that makes me so mad/sad/angry, but that was the first of 2008.

Vacations and a new house

that if you layer enough, a bra is not really necessary! LOL!
32. What kept you sane? Great friends, my mom coming for a Fall visit. Doing lots of fun activities with the kids.
33. Which celebrity/public figure did you fancy the most?
Well there's no surprise who my favorite celeb is...but honestly I really enjoyed watching rookie running back Adrian Peterson (former OU SOONER) playing a phenomenal year with the Minnesota Vikings and earning the "Offensive Rookie of the Year".
34. What political issue stirred you the most?
Not sure, I guess the whole Rosie/Elisabeth thing. I have a very hard time tolerating Rosie.
35. Who did you miss? family and then when we moved in Nov, I missed Beth and the kids, Kathy and the kids...other friends, friends from church.
36. Who was the best new person you met? Kelly, my new friend here and I guess Kathy since I did meet her in -07...seems like I've known her and Emily and Alex and Tate forever!
37. Tell us a valuable life lesson you learned in 2007.
To not talk about things that bother me about another person with others...if I have a problem (or question about something) with someone/something, I should go to that person. I put myself and a dear friend in a very uncomfortable situation last year and then I felt so convicted and sorry. I immediately went to the person and apologized and I felt so embarrassed and ashamed, even though I had to let her know.

If my sweet, dear friend is reading...

I'm thinking about you everyday, tons of times a day. Thinking about your situation and it breaking my heart...can't imagine going through anything similar, but knowing that you will prevail and survive and be successful for you and your sweet family.

Fashionably late as usual! ;) My computer time is getting less and less!

We had a great New Year's Eve Celebration...had some friends over, three other couples from our new Sunday School class along with a few kids. We ate (and ate and ate!!!) and played some fun games. I love having people over for game night!
